Miles Marshall
Founder / Barista

After leaving school, I was unsure what I wanted to do in life. So, despite hating coffee at the time, I found a job in a local coffee bar. I quickly fell in love with it and the coffee industry as a whole.

I could see that there was a lot of room for improvement in the coffee world, so two years after I started working in the coffee bar I set up a mobile coffee business (The Wacka Wagon Co). Although this was tough, it was extremely rewarding and I massively enjoyed the challenge of running my own business. Always looking for the next challenge and to grow my business, I knew the next step was to begin roasting coffee, which I did last year. This was the launch of Wacka Espresso.

I love the idea of young creatives working together to produce something new. With Aisling and Dylan on board with the business and with the opening of our first coffee house in Wimbledon (8 Leopold Road), I'm sure Wacka Espresso is in for an exciting 2019.

My love for food started as a young child. My parents favourite story is of a two year old me eating seconds of chicken liver pate and butter poached monkfish in France, so it was only fitting I'd cook for a living.

Having left university I started working in a restaurant in Ballymaloe House. This furthered my love of fresh and seasonal produce, as they would even source some of their produce from the grounds itself. I then enrolled in Leith's School of Food and Wine, where I received a CHT Level 4 Diploma in Professional Culinary Arts.

After graduating from Leith's I worked for Jose Pizarro's restaurant, Pizarro, in Bermondsey Street. I then moved onto Petersham Nurseries in Richmond where I've been working for the past two years. Here is where I met Dylan who was working as a waiter at the time and while I spent time in pastry, he acted as my guinea pig for new desserts.

Having been approached by Miles and Dylan to join the business, I jumped at the opportunity. I believed I could utilise my knowledge and respect for well-sourced seasonal produce, simple cooking and amazing flavour. Something I can't wait to showcase in my own food at Wacka Espresso.

Leaving college I tried getting into drama school, however I was told I didn’t yet have enough life experience. So, I found a job working as a waiter at Petersham Nurseries. It was during this time I got to learn about making coffee, fine food and my interest and passion for wine grew as I moved from a waiter, to head waiter and then onto assistant Sommelier. This was where I first met our awesome head chef, Aisling Chaudhuri. Having been friends with Miles since we were 10 and living together for the past year, we'd often discuss the possibility of combining our knowledge and strengths and making a business out of them.

I’m looking forward to opening up Wacka in the evening and showcasing some exciting wines from across the globe, paired with the equally exciting small plates that Aisling has created.
